Easy Panko Crusted Baked Cod Fish

Ingredients:
  • 2 Lbs. Fresh Wild Caught Cod (about 6, 3” Pieces
  • 1 Cup Panko Bread Crumbs
  • 2 Tbsp. Avocado or Olive Oil
  • 1 Tsp. Kosher Salt
  • 1/2 Tsp. Black Pepper
  • 1 Tsp. Fresh Parsley (optional)
  • Fresh Squeeze of Lemon
Directions:
  • Preheat oven to 425 degrees.
  • Pat cod dry with paper towels to get rid of any excess moisture.
  • Season Cod Fish with 1/2 of the salt and pepper.
  • Mix panko bread crumbs with oil, and the rest of the salt and pepper and stir to combine.
  • Sprinkle 2 Tbsp. of bread crumb mixture over fish and press on top of the fish pieces.
  • Bake for 12-14 minutes until bread crumbs are toasted and fish is cooked through.
  • Sprinkle with parsley and a squeeze of lemon if desired.
Note: You an divide this recipe in half for a smaller portion and
